Happy Eats Healthy: Strawberry Nut Milk

I’ve never really been a milk fan. I can’t even remember drinking a glass of milk as a kid. But there are great uses of milk, such as in a smoothie.

Dairy is a controversial thing these days, and I’m not about to tell you whether you should or shouldn’t be eating dairy or if it’s right for your body; that is something you need to use your intuition for. (As a health coach, I can help guide you in this area.)

But, this Strawberry Walnut Milk is dairy free, so you can set the controversy aside on this one.

Strawberry Walnut Milk

  • 1/2 cup raw walnuts
  • 2 cups water
  • 1 tablespoon honey
  • 1/2 teaspoon almond extract
  • 1 cup strawberries

If you have time, soak the walnuts* in water overnight. Place the almonds in a shallow dish and cover with water; soak overnight. Drain and rinse.
Place all the ingredients in the blender, blend until smooth (a couple of minutes.)
Strain through a fine mess strainer; this is an important step for smooth milk.
Enjoy!

*Soaking the nuts removes their exterior barrier that can be hard on digestion systems and allows them to release into the milk easier.

Happy Healthy Tip: Strawberries always top the dirty dozen list (dirtiest fruit); spend the money on organic.
