One of the newest breweries to hit the scene in Chicago and the first Latino microbrewery in the US is 5 Rabbit, and they have been putting out some rather unique brews. Having tried their mainstay beers, I would be confident to recommend any of them to you. This month, however, I have to choose just one. This weekend, while I’m sitting by a campfire with friends, I will be drinking some of 5 Rabbit’s 5 Vulture.
Not too long ago I had the opportunity to sit down with the creators of 5 Rabbit Cerveceria, Isaac Showaki and Andres Araya. What I was struck with most was their passion for great beer and their desire to share it with others. They started making their own beers because they were both sick of their “day jobs,” but their love of the beer kept them both brewing. They have even hooked up with a Chicago homebrewing legend and respected author, Randy Mosher.
These three have created beer that is targeted toward a rather specific audience but have crafted world class beer. Their 5 Vulture pours a toasted amber and tops with an off-white head. The first aroma I get is of the roasted ancho chilis they use in the brewing process, but I also get some strong bready, nutty aromas.
This beer gives just a little heat on the back of the tongue while you drink it but is just enough to remind you that it’s there. The body is medium and very drinkable. The piloncillo sugar they use ferments completely and provides a bit of a lighter body for a stronger beer, but it also embeds some complex, molasses flavors.
This beer gives some dark, smokey flavors that match well with something off the grill, which is exactly what it was designed for. The guys at 5 Rabbit create beer to be enjoyed, and there is no better way to enjoy beer than with friends and good food. Be sure to check the side of each bottle to see what the guys recommend you pair with each beer.
