Nice Cream is in trouble. Right now, Nice Cream is a small but mighty operation, and we like it that way. Our tiny team uses natural ingredients, organic, pasteurized dairy, and a very simple process to make high quality, safe ice cream.
When a State of Illinois regulator told us we had to shut down production for lack of a “dairy license,” we were confused and disheartened. As our business has grown, we have complied with every licensing and safety requirement that has been presented to us, and consulted with many experts along the way to make sure we were following all necessary precautions for food safety. This new rule does not make sense for our small company and the simple way we make Nice Cream. We don’t want to overhaul our process, recipes and end products– we think real strawberries are better for people than strawberry syrup.
We know small batch, handcrafted ice cream isn’t dangerous, and we would like to prove this to the regulators, and receive permission to keep working. We are consulting with legal experts and food scientists, and we believe we can make some changes, not only for Nice Cream, but for all artisanal ice cream companies in the city and state. But to do this, we need to maintain our operation, perform tests on our process, consult with lawyers and food scientists, and continue to build grassroots support for local food.
