El Bulli: Cooking In Progress

The subject of this winter’s gastronomic tribute at Chicago’s ultra-hot Next restaurant, Spanish chef extraordinaire Ferran Adrià is often extolled by his devotees as an alchemist who brings the aesthetics of taste to new heights. Others deride him as a foodie’s Dr. Frankenstein. However you choose to label him, there is no doubt that the world’s foremost proponent of molecular gastronomy aims to bring the principles of science and the sleight-of-hand of magic to the art of cooking.

This concentrated portrait conveys the spirit of no-holds-barred experimentation, the discipline, and the tension that characterize Adrià in action with his team in his laboratory-like kitchen as the slate of dishes for a new season at his exclusive restaurant El Bulli is conjured up.
